Tamale pie
This is adapted from a recipe in Better Homes and Gardens, with some added veggies and cooking everything in one cast iron pan Filling: 1 lb ground beef 1/2 large or 1 small onion, diced 3 cloves garlic 1/2 red pepper 1 tbsp chili powder 1-2 tsp cumin 1-2 tsp oregano Brown ground beef, then drain and/or push aside to one side of skillet. Sautee onion, garlic and red pepper and sprinkle on seasonings. Add: 1-1.5 cup tomatoes with juice (canned, crushed, diced, fresh chopped) a blob of chili sauce another blob of ketchup 1-2 Tbsp tomato paste 1 small can green chiles 1/2 can niblet corn Simmer and adjust seasonings and tomato contents to taste - you want to have a sort of tomato matrix, but not really soup. Maybe 20 min.
