Tamale pie

This is adapted from a recipe in Better Homes and Gardens, with some added veggies and cooking everything in one cast iron pan
Filling:
1 lb ground beef
1/2 large or 1 small onion, diced
3 cloves garlic
1/2 red pepper
1 tbsp chili powder
1-2 tsp cumin
1-2 tsp oregano
Brown ground beef, then drain and/or push aside to one side of skillet. Sautee onion, garlic and red pepper and sprinkle on seasonings.
Add:
1-1.5 cup tomatoes with juice (canned, crushed, diced, fresh chopped)
a blob of chili sauce
another blob of ketchup
1-2 Tbsp tomato paste
1 small can green chiles
1/2 can niblet corn
Simmer and adjust seasonings and tomato contents to taste - you want to have a sort of tomato matrix, but not really soup. Maybe 20 min.
Corn bread topping
Dry ingredients in large mixing bowl
3/4 c corn meal
3/4 c flour
2 tsp baking soda
1 tsp salt
wet:
1/2 c milk
2 eggs, beaten
3 tbsp oil (or melted butter if preferred)
remaining 1/2 can corn (or creamed corn if you have it)
1 c grated cheese if you want (I don't, bc I'm lazy)
Fold into dry ingredients, then drop in dollops on top of meat mixture
Put cast iron pan into 375 oven for 25-30 minutes, let cool about 5-10 min before serving with sour cream and salsa
