Basic chow mein
Another take-out style recipe that you can adapt however you like.
1 lb chow mein noodles
1/2 large onion
3 cloves garlic
1/2 bunch of green onions
2 tsp soy sauce
1 Tbsp dark soy sauce
1 Tbsp oyster sauce
1 Tbsp mirin
2 tsp sesame oil
Prepare noodles per package directions. Different types have vastly different cooking/hydration needs. The ones we used here needed to be soaked in hot tap water for 1 minute, but some need to be boiled or steamed.
Slice onion into thin strips. Slice garlic thinly, or mince. Prepare green onion parts separately - slice white part of green onions into 1/2 cm slices, and slice green parts into 2 cm lengths.
Mix sauce ingredients (except sesame oil) together and set aside.
Heat wok or large frying pan to medium high heat. Add a little oil and fry onion and white parts of green onion until softened a little. Add garlic and saute until fragrant.
Add a little more oil and add in noodles. Fry and stir until noodles are separated and oil is distributed throughout. Add sauce and continue to stir fry until homogenous. Taste and adjust seasoning as needed. Sprinkle with sesame oil and green parts of green onions and mix well. Add in any fully cooked bonus ingredients (like the bbq pork shown here).
You can also add a few handfuls of coleslaw mix with the onions, or other finely shredded veggies. If you want bean sprouts, add them after the sauce, they cook very quickly and get soggy quickly.
