Oatmeal Crispies
This is one of my favourite cookie recipes. They're sweet and crispy and chewy and addictive. I got it from a roommate's cookbook some time in the early 90s, and after I moved out I spent YEARS trying to find it again. It's from one of those vintage, local cookbooks from Alberta, so not easy to find. I eventually tracked it down and bought a used copy from Amazon:
Here it is, with my own notes and pictures, so you don't have to go searching for it with a time machine or rural Alberta estate sales.
1 cup white sugar
1/2 cup brown sugar
1 cup butter or margarine (I prefer margarine here - they spread less and are less greasy)
1 beaten egg
1 tsp vanilla
1 1/4 cups rolled oats
3/4 cup coconut
1 1/2 cups flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
Cream together butter and sugar. Add egg and vanilla and beat in. Stir in oats and coconut. Stir together dry ingredients then mix in. Roll into 1 inch balls and space 2-3 inches apart on a lightly greased cookie sheet. Slightly flatten with a fork. Bake at 350F for 12 minutes, until lightly browned around the edges. Cool for 1 minute on cookie sheet then transfer to a cooling rack. I like these on the under-done side, where they're chewy. If you cook them on the browner side they become very crispy, like a Dad's oatmeal cookie.
