Hot fudge sauce



Hot fudge sauce, the kind that firms up on ice cream and keeps forever in a glass jar in the fridge and can be reheated in the microwave:

Hot Fudge Sauce

1/4 cup sugar
1/2 cup light corn syrup
1/2 cup plus 2 tablespoons water
3/4 cup unsweetened cocoa powder
1 tsp instant coffee

Mix together in a saucepan over medium heat and heat til boiling. Boil gently for a few minutes. (The original recipe said 1-2 minutes, stirring constantly. I left it for about 5, with no stirring at all and it was fine)

Meanwhile, melt 7 1/2 ounces bittersweet chocolate, or 1 1/4 cups chocolate chips in the microwave.

After the first mixture has boiled a bit, whisk in the melted chocolate until smooth. Boil for a few minutes more if it's too watery, but keep in mind it thickens considerably as it cools. And that's it! The best, not too sweet, dark chocolate flavour, while still using cheap pantry staples.
