Sweet Potato Fries
Homemade oven baked sweet potato fries are a favourite side dish in our house. You can always make them by simply cutting raw sweet potato into strips, tossing with olive oil and salt, and baking in a hot oven. Those are delicious too, but this is the slightly fancified version that gives a bit of a crisper coating on the fries.
Preheat oven to 425F, convection if possible.
Peel some sweet potatoes.
And cut into strips.
Now put an egg white or two in a bowl and beat with a fork.
Until foamy.
Add in 1 tsp of seasoning salt and 1 tablespoon of cornstarch.
And mix.
Toss the sweet potato strips with the egg white mixture until coated well.
Then sprinkle on another 2 tablespoons of cornstarch and toss well to coat evenly.
Lay out in a single layer on a parchment lined cookie sheet.
Bake for 30-40 minutes, turning halfway.
