Quinoa Tart
Here is a great brunch dish which is basically like quiche, except way healthier and just as tasty. The difference here is quinoa and smoked tofu. Did you know that quinoa is one of the few plant based foods that has all of the nine essential amino acids? Now you know!!! Another different ingredient here is smoked tofu. Of course it has lots of protein, but really we don't necessarily need any more in this dish because of the eggs and quinoa. Its here for the flavour-YES, the flavour, if you want to go meatless. I baked this once for an office brunch and my friend who pretty much lives on Wendy's Baconator burgers would not believe that there wasn't ham in it! Just like quiche, you can pretty much put anything you want in this-mushrooms, onions, ham, sausage, peppers -the list goes on. I think as long as you keep the quinoa, eggs, cheese and milk as the base, you will be ok.
2 cups cooked quinoa (~2/3 cup dry )
4 eggs
1 cup grated zucchini
1 cup grated cheddar cheese (or any other cheese)
1/2 cup diced smoked tofu
3 tablespoons chopped parsley
2 stalked chopped green onions or chives
2 tbsp parmesan cheese
1/3 cup milk
1/4 tsp salt
1/4 tsp pepper
Cooke the quinoa like you would rice (1 part quinoa, 2 parts water). Make sure you rinse the quinoa in a sieve, as it can be bitter if not washed.
Combine all ingredients in a bowl and blend well with a spoon. Pour into greased pie plat and bake at 350F for about 30 mins or until firm
You can also put this in muffin tins for lunch sized portions or even in tiny cupcake tins for party appetizer. I actually started looking for this recipe after having similar appies at a cousin's party once and scoured the internet looking for a recipe. This is my version of about 4 different ones I found !
