Chicken Karaage

Crsipy , tasty chicken bites!  Great as an appetizer, or as a  meal , served with rice and salad.





1 1/2 lbs boneless skinless chicken thighs
3 tbsp soy sauce
1 tbsp minced ginger
3 large cloves minced garlic
2 tsp white sugar
1/2 cup potato starch
Sea salt

Cut chicken thighs into bite size pieces

In small bowl, mix remaining ingredients except sea salt.



Pour marinade over chicken pieces.  Refrigerate for at least 1 hour. 



Put potato starch in bowl and  toss chicken pieces to coat all over.







Heat vegetable oil ( approx 1 inch deep ) in a heavy pan on medium high to 350-375 degrees.   Or use my method- take a wooden chopstick  and touch bottom of pan.  Bubbles rise from tip of chopstick when oil is ready.  Fry till golden brown on both sides.


Immediately sprinkle  hot cooked chicken with sea salt to taste.  Serve with lemon wedge and rice!  Also good with chipotle mayo!

Note the light crispy coating that the potato starch gives the chicken!  ENJOY!
